Maple Turkey Sausage

It’s been a couple days since I’ve posted.  I made the Quinoa salad that I’ve been talking about on Sunday but haven’t gotten the recipe completely written.  Yesterday I spent the day at the cardiologist getting hooked up to a heart monitor that I’ll wear for 30 days and then getting blood drawn for a lupus panel test.  Crikey!  That was a lot for a girl to take in on one day.  Hoping to get some answers about some health issues I’ve been having.  I’m so glad my green eyed Irish guy was there with me for moral support.  He’s my rock.  He helps keep me strong and sane.  He loves me with his whole heart and I know there’s nothing he wouldn’t do for me. There’s not enough true love in the world these days.  I’m so glad I found mine.  I love you honey!

Ok, enough of the mushy stuff.  Let’s talk food!  I’ve been searching recipes for turkey sausage, specifically maple turkey sausage.  G really loves it.  I thought I can make this and it’ll taste better.  I didn’t find a recipe I really liked so I combined this one and that one, added my touches and voila maple turkey sausages.  Ground turkey tends to be dry so I added some olive oil to the mixture to help keep the patties moist.  There may or may not be one that didn’t make it into the picture.  Quality control is what I call it.  Next time I make them I might add some fennel but they are very tasty the way they are.

Maple Turkey Sausage

3 cloves roasted garlic (I had some in the fridge.  If you don’t, just use 1-2 cloves of garlic finely minced)

1 pound ground turkey

1/2 Tbs. olive oil

1 Tbs. maple syrup

3/4 tsp. kosher salt

1/4 tsp. black pepper

1/4 tsp. red pepper flakes

1/2 tsp. dried sage

3/4 tsp. dried marjoram

3/4 tsp. dried thyme

1/4 tsp. cayenne pepper (or more if you like a spicier sausage)

generous 1/4 tsp. allspice

1-2 Tbs. olive oil for frying

In a small bowl, mash roasted garlic until it forms a paste (if using minced garlic, just add with the rest of the ingredients).  Add remaining ingredients except for the oil for frying.  Mix lightly until thoroughly combined but be careful not to over mix.  Ground meat gets tough if it’s over worked.  Heat the 1-2 Tbs. oil in medium skillet over medium high heat.  Form the meat mixture into small patties which makes approximately 16 or medium sized patties which would make about 8.  Drain on paper towel.  Enjoy!
