Gluten Free Banana Muffins


  Sometimes a girl needs a little somethin’ somethin’ but you want it to be a little healthier for you.  These sweet little muffins certainly fit the bill.  They’re gluten  and sugar free.  You wouldn’t guess it from tasting them though.  The addition of chocolate chips makes them taste decadent.  You can feel naughty eating them without feeling guilty.  Give ’em a try.  You won’t be sorry.      Gluten Free Banana Muffins

Gluten free Banana Muffins
1 cup peanut butter
2 large, very ripe bananas
2 eggs, beaten
1 tsp. vanilla
2 Tbs. Honey
1/2 tsp. baking soda
1 tsp. Apple cider vinegar
1/2 – 1 cup chocolate chips (I used 60% cacao Ghiradelli bittersweet chips)
Preheat oven to 400 degrees. Place liners in a 12 cup muffin tin. Mix ingredients until just combined and pour batter into liners. Bake for 15 minutes.  Enjoy!
