Bacon Sweet Potato Tots


I love sweet potatoes!   Funny thing is I never liked them as a kid and we had them EVERY holiday.  These sweet potato tots do not disappoint. They’re crispy on the outside, lightly seasoned and creamy inside.  And they have bacon inside.  BACON!  So very delicious.  The original recipe is from Melissa D’Arabian and you can find it here.  I’ve added spices to them, used the bacon grease as part of my frying oil and drizzled them with honey.  OH MY YUM!  These will also freeze well.  Just pop them in the oven at 400 degrees and bake for 15-20 minutes or until warmed through.  They’re messy but fun to form and it’s so cool to think you’ve made your own tots.

 Bacon Sweet Potato Tots

2 medium sized sweet potatoes

3 slices bacon, fried and crumbled

3-4 heaping Tbs. flour

1/2 tsp. salt

1/2 tsp. pepper

1/2 tsp. cinnamon

1/4 tsp. garlic

1/4 tsp. chili powder

3 cups vegetable oil

Honey for dizzling, if desired

Bring a pot of salted water to a boil.  Add the whole, unpeeled sweet potatoes.  Cook for 10 or 15 minutes.  You don’t want them completely cooked, only about 3/4 done.  Drain and set aside to cool.  Fry bacon in a medium sized skillet.  Remove to a plate lined with paper towels to drain excess grease.  Crumble when cool.  Do not discard grease.  When the sweet potatoes are cool enough to handle, peel them and then shred them with a box grater.  Place several layers of paper toweling on a plate.  Put the shredded sweet potatoes on them and then top with several more layers of paper towels.  Squeeze and drain out as much excess water as possible.  This will ensure crispiness.  Place the dried off sweet potatoes in a medium sized bowl.  Add the flour, bacon, salt, pepper, cinnamon, garlic and chili powder.  Mix until combined.  Use a tablespoon measuring spoon to scoop the sweet potato mixture into your hand.  Roll it in your hands to form a tot shapes.  Add about 3 cups of vegetable oil to the reserved bacon grease and heat to 300 degrees.  I had my heat at medium high.  Add half of the tots to the pan and cook until brown and crispy on all sides.  Remove to a plate lined with paper towels to drain excess oil. Repeat with the other half.  Salt lightly and drizzle with honey if desired.  Om nom nom.  Enjoy!
