Banana Bread Grilled Peanut Butter Cup Sandwich 



This is an alternative to a sandwich that was floating around Facebook a few months ago. It had two slices of bread, toasted, buttered and sprinkled with cinnamon sugar on both sides. It was then filled with a chocolate bar and grilled. Yes, I made that one and it was quite tasty. Looking at my banana yeast bread made me think of trying a version that included peanut butter cups. I know, right?  Genius!!  The slight banana flavor of the bread which brûléed from the cinnamon sugar and the melted, oozing peanut butter cups made this an outstanding combination. Let’s make our sandwich!

Banana Bread Grilled Peanut Butter                          Cup Sandwich 

2 slices bread (I used banana yeast bread)

Soft butter or margarine

1/8 cup sugar

1/2 tsp. cinnamon 

4 foil wrapped peanut butter cup miniatures 

Combine sugar and cinnamon in a small bowl. Set aside.  Place a small skillet on the stove on medium heat to preheat. Toast the bread. Butter one side and sprinkle with the cinnamon sugar. Butter the other side and sprinkle with cinnamon sugar. Unwrap the peanut butter cups. Cut each in half horizontally. Place one slice of bread in the skillet. Top with the peanut butter halves. Place the other slice of bread on top of the peanut butter cups. Allow to brown on the bottom. Turn sandwich over and brown on the other side. Remove from pan. Enjoy the crispy, oozing sandwich.
